As I said on Monday, I am working hard on my healthy eating resolution. In order to stick to that, I must do a majority of my cooking on Sunday. That is the only day I have the energy to put together anything inspiring. Something I wanna eat a least a couple of days in the week.
So this past Sunday saw me boiling some eggs - love them just with Frank's Red Hot - that may make it into a Weight Watcher friendly egg salad.
I also made a batch of steel cut oats that ends up being 4 breakfasts for me. I just add a little honey and cinnamon and call it a day. Add a glass of cold fat free milk and I am a happy gal.
Then on to dinner which ended up lasting me 3 days (hey I am single and so I eat a LOT of leftovers).
What did I make? I am glad you asked!
I was inspired by The Pioneer Woman to make a Pantry Pasta. I saw her do it on her HGTV show and thought "I can do that"! I didn't follow her recipe, per se, but I used the basic concept.
I took the pic with my iphone so it isn't the BEST quality, so please forgive.
I dug through the pantry, and found some whole wheat Rotini. Not sure when I got THAT as Penne is my usual go-to pasta. I found some marinated artichoke hearts, roasted red peppers and a can of petite diced tomatoes. I sauteed some chopped onions and garlic and then combined all those pantry items together.
I needed to add some type of fish or chicken or something, so I dug in the freezer and found some tail off, peeled and deveined shrimp. Defrosted those little pups and sauteed them. I shoulda added the onions and garlic to them instead of the pantry items as the shrimp needed a lil more flavor.
All in all it was pretty yummy but def coulda used some fresh herbs. Maybe a little torn basil or chopped oregano. HMMMM, I have to keep that in mind this summer when my little herb garden is in it's green glory.

I grabbed some cheese-stuffed tortolini and used pesto I had so Poof.
Loved this one! I guess I will try to continue to be inspired to eat better myself. My husband and I are now on the counting of calories as of yesterday. It is amazing how many calories there are in the good stuff; like chocolate for instance. You know the little piece of Chocolate here and there can't hurt.

I boil a dozen eggs every Monday morning and keep in the shells in the fridge. It is a perfect 'go to' snack for myself and my grands. I have been walking on my treadmill. 5 minutes every 2 hours at 2.5 MPH.
If you like veggies, here is my favorite lasts a few days dinner:
Rotini
Zucchini squash 1 cut into bite sized pieces
1 bell pepper (I use any color) cut into bite sized pieces
1 small onion chopped
1 Large carrot sliced thinly
1 can diced tomatoes with juice
Brown onion in small amount of Olive oil and add carrots, zucchini and cook aprx 5 minutes. Add pepper and cook until crisp tender and then add tomatoes and simmer until noodles are done.
Drain noodles and add veggies and I have added shrimp to this.

you seem to have this all figured out!! I buy according to what the circulars have on sale for the week...we have pasta, red meat, chicken, pork, seafood and a combination of all the left overs every week...i usually make a soup on Thurs and throw everything together...always different soups...and almost always good!
